the "throttle" will indead vary by load but the RPM will NOT when not in eco mode. in non eco mode it will run a a fixed high rpm, throttle opening will vary to keep the rpm constant. since it's already at rated rpm, it can supply significant current and can "catch up" pretty quick
in eco mode the rpm is low w/o load, near idle, and when hit with a big load, the throttle opens up and the rpm must rise enough to provide required current output. But with an inductive motor load like a compressor, rpm may not get high enough for the inverter section to provide the required current before the generator goes into overload.
so in eco mode you will also hear the rpm varying depending on load.
and your experience is not unique. I have dual honda's. at lower temps (80's) or lower altitude (<2000ft) mine will start and run the AC in eco mode pretty easily. At high temps (95+) and/or high altitude the EMS will see the voltage drop below 100V and kick the power in and out and AC won't start. W/O the EMS, the generators will bog and sometimes overload,especially at 4000+ ft and high temps. then non eco is the only way it will start. And that's with everything turned off, soft start caps on the AC and delay on the fan start. It also depends on the AC brand. Colemans seem to be the worst for starting.
