I think we're pretty close. Here's what we're thinking.
Airstream Flying Cloud 25 or 27.
4x4 Ford E350 15 passenger van (7.3L diesel preferrably). This will be the tow vehicle and will double as a garage for the bikes, camping gear, etc. Plus we could ditch the airstream for a day or two and sleep in the van if needed.
That's the thinking for now anyway. Nothing else really appeals.
