Why would you want a manual trans? It just reduces your overall towing capacity. The auto transmissions out there today are far stronger than any clutch. I like driving a stick but, IMHO: for towing you are far better off with an auto trans.

Manual trans is pretty sweet for towing, and you're partially right. The only manual trans truck offered in the last 10 years has a clutch that seriously limits the trucks towing capacity, however there are a plethora of clutches available that will hold whatever power you can throw at them and the rest of the truck is considerably more capable than the factory clutch.
For the OP, you're right on track. A new(er) 3/4ton of any flavor or combo will tow a 10k trailer safely and easily. How fast you get up hills and what kind of fuel mileage you get depend on engine, gears and gas or diesel.
