For police K-9s, DH just left the car running and locked. However, there is an alarm if the temperature gets too high and/or the a/c or engine fails. Not many cop cars are stolen (especially with large dog inside) and typically, a cop doesn't get too far from the car and/or leave it for hours at a time. But, K-9s are restricted to the back seat and so they don't usually have access to any of the buttons/gears/etc. in the front which means they don't have the ability to accidentally turn the car or a/c off or change the gears.
Personally, we would leave our dog in the motor home if we knew we were going to a place that didn't allow dogs and the outside temp was greater than 60 degrees.
