In my life I have found the above to be true... HOWEVER on most RV units there is a sensor that is poked into the evaporator coils to detect just this should it happen.. I have heard of cases where it was not so poked.
And I've seen strange things happen when the intake air filters get dirty (The filter that is inside the RV in the A/C air return)
On mine when this happens air gets sucked in via the path that water would normally follow going OUT. Then it gets sucked up onto the condenser where it can indeed freeze into ice.. And of course when you turn OFF the A/C.. NIAGRA FALLS.
Clean, or at least inspect filters often. (Within the last week in my case)
