rfloyd99, I can’t help much for California, but for Oregon here are some thoughts.
Oregon has some of the best State Parks you will find. There is a great variety of them, from large to small. The Oregon Coast changes a lot between CA and the Columbia River. We’ve camped from North to South had a blast. It is the busy time of year so you really need to make reservations now.
Starting in the South we like Humbug Mountain State park, its a small quiet park but great if you are in the area. If you enjoy Jet Boats then try to stay near Gold Beach, there are some private campgrounds up the river a bit and at a couple the Jet Boats will even pick you up right from the dock.
Winchester Bay is a great place to stop, up a bit further is Honeyman State Park which is just south of Florence and a great place to hike the Dunes. We’ve camped here for years and one of my favorites. Mo’s restaurants are located up and down the coast, we like the one in Florence. This is not an expensive place, but its fun and casual, they are known for their Clam Chowder. Past Florence are some great day parks to visit. Up and down the coast you will find the Lighthouses too. About half hour north of Florence is our current favorite RV park, Sea Perch RV Resort. This is a private campground that is right on the coast, not cheap but the views are worth it in our book.
Heading up north spend some time in Newport - the Aquarium and Hatfield Marine Science Center are great stops. Just north of Newport is Beverly Beach State Park. A few spaces are located near the water and some are inland, there are no ocean views but it’s a great heavily treed campground.
Fort Stevens is near Astoria and a great campground, but can be very busy. Seaside is a fun tourist city.
All those can be find via google. Enjoy your trip.
