We've been on the I-5 with our TT lots and also along the coast from Ca. up to BC lots. The I-5 can be interesting but there aren't a whole lot of CGs like there are along the coast and you won't see that many RVs. Grants Pass is lots of fun and there are some great CGs up in the mountains east of Medford. The Oregon Coast is a must-do in at least one direction. Do as much of the 101 as you can all the way to/from Vancouver.
Through Wa. I'd def. avoid going through Seattle if you can. You can skirt around it on the east side but is still very busy. Only driving through LA is worse... We usually go 101 through Wa. and up the west side of Hood Canal and take the ferry from Port Townsend over to Whidbey Island. This route is another must-do. There are some great things to see around the eastern side of Seattle like Mt. St. Helens and Mt. Ranier tho.
Note that there are very few CGs in the immediate Vancouver area and they are extremely busy in the high season. Even after kids are back in school are busy. Book as far in advance as you can. There's more to choose from just south of the border.
How about getting a one year pass for Thousand Trails? Wa. & Or. are one zone and Ca. is another and you'd to buy two zones at $565 each. We bought a full membership off CL for $700 (plus transfer fee and annual dues) and we can use their CGs across the US.
Actually though, it's all fantastic!! Just make sure to book in advance as far out as possible. DW book everything in advance for long trips. One thing that can change plans unexpectedly is forest fires and it's anybodies guess how this summer will be.
