Can it be done? Yes, I am on my second all electric camper.
Is it worth it? Depends.
Propane is great for cooktops and grills. (We have a gas cooktop at home and carry a gas grill in the truck. The big issue is fittings - one in US/Canada, different ones in Europe, and travel beyond that may require hose splicing.
Scholars differ on three way fridges, but we have used two 12v units - they are reported to cool better and don't have to be leveled.
We use an induction cooktop and a microwave. We also use a toaster and an espresso machine.
Can you do it with your RV? Maybe, but I would bet that your will find that your electrical plant is woefully small in terms of battery capacity and rechargers. This starts with wiring to your alternator that is probably undersized and continues to solar and shore chargers. You will probably want to replace a "converter" with a proper inverter/charger.
WARNING: Opinion Follows - Serious, all electric boondocking starts at "4." That is 400Ah of battery and 400w of solar. Our campers have all been "6"; 600Ah of battery and 600+w of solar.
We do not use a generator and have never found it necessary. The big exception might be air-conditioning, but that is beyond the scope of this post.
