A couple of comments- the 6 hours of diagnostic work they did will be basically for free- insurance does not pay for that. Virtually every problem, other than communications, sounds like issues with the insurance company. Honestly, on a job that extensive with that many unknown but possible faults, that time frame, during the height of the season, doesn't sound unreasonable- more so given the chassis problems you have had. IMHO, it should have been totaled to begin with.
