For the same reason you put them on furnaces and they are basically already on WH to start with (BTW neither of those have accesses direct to the interior of the RV) ... to prevent insects especially mud daubers from building nests and interfering with the designed air flow which can effect the designed working of the appliance.
IMO it would be a big PAIN to clear a bunch of nests in the middle of the cooling fins up near the top of a refer.
So there are at least my answers to your questions on why;)

OK, I see you point. I have had problems with wasps building nest in my furnace vents but, I have never had a problem with them in the fridge. Maybe some wasps are more aggressive at building nests in some area of the country.
