A year on the road full time and I too quickly found out just all what was pain to pull out and set up and then pack it all away when it was time to leave. I was exhausted before I even got to eat! :B
Here is what I finally ended up with that makes my tired bones happy!
Small Lightweight Aluminum folding table, found at Walmart. Not cheap but WELL worth the price for how light they are and how they fold up easily for storage. Buy one for the BBQ and one for you to eat on.
Ditched the lawn chairs in the bag. They are WAY too low to sit in and I no longer can get out of them!! Invested in a nice steel tube flat seat chair from Gander Mt or any big box sporting store. Folds flat and real easy to sit down and get out of.
Threw out all my BBQ's and bought this. About 2 inches thick when closed and will fit virtually anywhere in an RV storage bay. Uses small bottle of propane.

Place BBQ/stove on one of the aluminum tables and pull your chair up to the other table and you are all set!
All lightweight and easy to set up and put away. I'm a slow learner, took me a year or so to figure out how to scale down to items that were easier managed. :W
