While you are going down the highway, there is way to much air circulation in the refrigerator coil area for a build up of leaking ammonia to be affected by the pilot. Not saying it can't happen, but it is unlikely. More likely to happen when parked somewhere.
And you should be inspecting your coils for rust and corrosion which is a indication that you have a problem that could lead to a leak and a fire!
