Even if you didn't get the bearings tight enough they would not be making that noise unless the wheel were ready to fall off, and then it would be pretty consistent, not sometimes when you turned left.
You said you replaced one brake shoe when you repacked the bearings. I would suspect that. Always suspect the last thing you changed when a new behavior shows up.
