I think the dining plans make more sense for people staying in the hotels than it does for those staying in RV's in Fort Wilderness. If you plan on eating some meals in the camper, it may be advantageous to pay out-of-pocket, but, it will be expensive either way. Your probably talking a couple or so thousand dollars for meals. If you're paying, plan on drinking water instead of sodas or tea. all counter service and sit down restaurants will give you water with ice for free. That will save you a bunch, since drinks are not cheap. Also, it's going to be HOT in central Florida in August. You may want to head back to the camper in the afternoon and lounge at one of the pools in the campground. Then head back to the parks after supper. Consider things like take-out from Trails-end... they have great hot wings and pretty good pizza. As hot as it will be, you're probably not going to want to eat real big meals. JMHO
