not illegal except going thru *some* tunnels where the LP gas supply must be shut down. not unsafe in and of itself but if you think it is then it is. if your fridge is sufficiently cold and you severely limit openings it should be fine for 6-8 hours depending on the outside ambient temps. most all of us with RV fridges run them with LP while driving. some of us turn them off when fueling, some don't. when we had an RV fridge I always turned if off when fueling and I think that's the prudent thing to do but some may disagree.
