That's not an issue with the 7.3 in the OPs engine. The cavitation issues with the 7.3 were with the first 7.3s (IDI's) that used the 6.9 block bored out that resulted in thin cylinder walls to coolant passages around them. A lead 7.3L engineer from the IH plant in Ky back in the late 90's said the 7.3L could probably be run on straight water for in excess of 300K miles before any block issue may become an issue if even then.
