Welcome once again to the part timer club. You're doing great, the first year is always the hardest. This is the year you learn your rig and yourself. It's also the year you shake out the bugs from your rig. Weekend use and long term use will uncover a lot of issues.
Just a couple of things. For me the hardest part of RV'ing is turning the key. Once the key is turned rolling down the road is a piece of cake. Once I turn the key off and settle in, I don't want to turn the key again. YMMV
The other thing is with the fridge it may be the thermistor. Mine has never gone out so no experience here to offer. It is a part that does fail and is cheap and easy to fix.
