As for the freezer section, it's pretty easy to tell how well it's doing by how hard the ice cream is. It's NEVER hard like a rock as at home but we're satisfied when it's just difficult to spoon out :)

I too bought the metal hanging thermometer years ago. It still hangs in the RV fridge and like Skip my temperature is always around 34 degrees.
Hot day and open the door ten times or open it and look around trying to decide what to eat, and the temps WILL go up quickly in an RV fridge.
