I would run the numbers for the Nissan NV too. I know you where concerned about the lower 8700lb towing capacity, but they have the same 2500lb payload as the Chevy. I think they have a much less spartan interior too. Not sure how the prices compare but it is worth cross shopping.
The Chevy/GMC vans have not been updated in YEARS.
Either one has enough towing capacity and enough payload for what you are looking at doing.
EDIT: As far as I can tell, both the Express 2500 and the NV passenger V8 (with tow package), have a GCVW of 16K lbs. I was having a hard time finding concrete numbers so maybe someone else can clarify.
But it that is true, they should really both be able to do the job fine.
Same payload, same GCWV
GCVW is the max weight of the vehicle, all passengers and cargo, and the trailer when all weighed together.
If you are under that, and under payload with tongue weight+vehicle contents, then you are good "by the numbers".
