Although I have not used them, if all I needed was two inches I would not hesitate to go with the blocks. I will also point out that the spring hangers are available in different lengths. It is possible to replace the OEM hangers with longer hangers and get 2" to 3" of height.
I have years of welding and fabrication experience, and for a few year years had a weld shop. Of the many fabrications I have done, I can honestly say this is one is not at all complicated. There is more skill required in the welding. If someone has good welding skills, this should not be difficult. The subframe is simply a 2"x (4", 5", or 6") tubing box frame between the trailer frame, and spring hangers. You do need to measure the location of the hangers before you remove them.
When I lifted my trailer, I was uncomfortable with the height of the spring hanger bolt relative to the trailer frame. It is something like 9" (subframe assembly and spring hanger). Even though my trailer is light, I am sure there is a lot of side force which could cause the hangers to rack to one side during a turn. To prevent this racking, I put a brace from the top of each spring hanger to a frame cross brace (about 18" inboard). Hopefully I explained that. I looked at several OEM trailers with spring hangers about the same height, they had no bracing.
