One thing I like about my small toyhauler compared to my previous camper - NO CARPET. I can easily sweep it out. I keep an old carpet sample inside the door to wipe my feet on, and a plastic welcome mat that I throw on the ground outside the door.
As for the paper towels, I have a hanging dispenser on the inside of the door under the sink. The weight of the towels holds it against the door and I have no problem with it unrolling. Something like this:
