Also, our new TT doesn't seem to have a toilet paper holder. I'm a little leery of mounting anything to the walls, plus I'm not sure where there'd be room without bumping into it. I'm thinking something like this might work to mount over the vanity door. Opinions?

We've used one of those wire shower racks all the 5 years we've had our trailer. No rust, even tho I strongly doubt it's SS. No scratches, cracks or breaks in the glass. Inexpensive, very useful/functional.
My parents had something like that in their trailer +20 years, never had a problem with it.
We opted for a wire-rack TP holder that has a 'basket' on the bottom that holds 3 extra rolls. Cheap & functional.
