Odors happen sometimes, no seal is perfect. Could be gray or black tank, if you cook and then wash dishes, your gray tank isn't going to smell like roses.
If you're creating a negative pressure inside the coach, like having an exhaust fan on or air conditioning on, hot outside, cold inside, but not enough windows open, nature will find someplace else to make up the air getting pulled out, including pulling it through the holding tanks.
