A buddy owns a wrecker service, I used to think the same thing.
He explained its a requirement of the police to get the road clear and open ASAP and if a particular company can't do that, they get pushed further down the call out list.
As for the finesse, it's the same deal, it's way faster to haul an intact trailer off the highway than it is to scoop up a million pieces and put them in a dumpster.
Here in IL a major towing company lost their IDOT contract because it was taking them way too long to remove vehicles from the highway. they would send out 3 wreckers and would take upwards of 2 hours to do something the new company is doing in a half hour (maybe a bit more).
