If I had the option of an induction unit in my Cougar, I'd be all over it. Unbelievably quick to heat the pot. Very energy efficient in that there is no heat wasted by heating the air between the flame and the pan and no "extra" heat given off aside from that required to cook the food in the pan... The solid surface does get hot, but, as soon as the pot is removed it cools right off. Never gets hot enough to burn anything onto the top itself; spills just wipe right off.
We have one in our S&B and you couldn't pry it away from myself or the DW :B As mentioned above, a magnet has to be attracted to the pan's bottom or it doesn't work. Early on, there was a dirth of "Induction Cookware" available, but, now there are more on the market and the selections are getting better all the time. We like the Circulon brand, but, any ferrous material will work.
