Any idea how many watts of solar panels he had on his Sprinter?

Would it be crazy to use a Nuwave as the only stove in a motorhome with 500 watts of solar, a couple batteries, and NO SHORE POWER?
I have no direct experience with this type of cooking but I did encounter a class B RV'er who had bought a used Sprinter and did his own van conversion. He had 4 deep cycle batteries and solar panels but no generator. His cooking was done with an induction hot plate and he was quite satisfied with it. Induction cooking is more efficient than standard cooktops because only the pan is heated.
