I love I-70 through Kansas, especially at night as that is the best way to see it other than from 30,000'. Once I get out West then sure the two lane roads.
For me it's not the journey, it's still the destination. I've seen enough of the middle of the country five trips ago.
MTPockets1 it sounds like you do not pull over either as your "right to be there and if they don't like it, they can take the interstate."
