As to which I drive... when I am towing my TT, I am not big on sight seeing, because I am towing - it might different if I was in a motorhome. I am a planner, so I plan my stops, visits, and overnights. Possibly, and hopefully!, when I and the missus retire we will "wander" and not plan so much!
I would define Interstate as any multi lane road.
Highway would be single lane in each direction with an occasional passing lane section usually on hills.
