Inverter Charger vs Individual Components
To be able to run the A/C and a major appliance at one time I'll need no less than 3000 watts. I'm either not understanding properly or something as I'm understanding that I'll need an inverter charge...

Why do you neded an inverter charger? All an inverter does is convert battery power to household power. Running high demand appliances like the AC will kill a normal battery bank in a couple of minutes, so, again why an inverter charger?
Most modern converters work quite well keeping batteries charged. There are some better than others, but.....
I think you need to read the 12 volt side of life before spending a dime on changing what probably already works just fine.
