When your 12V batteries die (which probably will be soon if you are running them that low), buy two 6V golf cart batteries. They handle deep discharge better.
If you are going to use your crock pot while driving at least put it the sink or better in a plastic tote on the floor. You don't want any bad bumps turning diner into a multi-hour clean up !
