Water will always flow and find its own level. So as long as the black tank is empty, or at some level lower than the gray tank level, the gray water will only flow toward the black side. You can generally hear the flow toward the empty black tank, and when I hear the flow slow, I shut the gray valve. Even if I didn't, and the two tanks sat at an equal level for a few minutes, gravity would still prevent black flowing toward gray.
You would only get "backwashing" if you were to start adding black water to the tank, or if you moved the RV and got sloshing started. In practice the two tanks are never connected long enough for that to happen. Honest, it works great!
