Thanks for all your input.
Just got back from my first dry camping trip (3 nights) and everything worked perfectly. As suggested, I put frozen gallon jugs of water in the fridge and freezer. Luckily there was lots of shade, and the trailer didn't get too hot. The fridge was mostly hovering around 36* and the warmest it got was 41* briefly. This is with three kids constantly opening the fridge, and standing there with it open. (I hate that :) )
Since I never dry camped before, I had no idea how long my water, battery and waste tanks would last. Hauled in 56 gallons in the fresh water tank, and it lasted until two hours before we packed up. This is with 5 of us (and one shower for the missus). Battery was at 2/3. Used a light for a few hours to play cards, and even had the furnace on at night. Waste tanks at 1/2 each. Gives me a reference for the next time. Great times!
