I agree with the others above. Looks like all your homework paid off well and your rig is performing the way it should. Your gas mileage is probably average when towing. Most gas tow vehicles will get 7-10mpg from what I have seen.
Don't fret about the RPM's when going up hills. Also, I used to have an F250 PSD and towed my trailer, which is quite a bit heavier than yours, in overdrive for over 10 years. Never had a problem in over 250,000 miles. My Ford manual said you can tow in OD as long as the trans does not hunt. Check your owners manual to make sure. Some of the other manufacturers do not recommend doing so.
