The biggest number to keep in mind is your payload capacity. This number must include the tongue weight of the trailer, cargo in the truck, and passengers.
For your truck, I would agree that a trailer of around 7,000 (give or take some), will be about the maximum amount you'd want to tow. You could certainly go higher, but longer trips, or trips with higher winds, or trips through hills/mountains will not be any fun.
