Sounds like you have the right attitude for this trip which after all is simply an exploration into the RV experience.
You've received a lot of good advice above so my suggestions will be minimal.
For a 5 day trip ensure you've food for 3 days and no more than that. You'll be doing a lot of road travel and probably eating at various restaurants for lunch and the occasional dinner. Try serving at least 2 dinners the family are used to having for the familiarity factor for the cook and eaters. You can go a bit out of your comfort zone for one meal to better understand how to cook in an RV or a stand alone grill.
Figure out in advance what overnight stops you'll make along the road and try to have reservations for the weekend at least since that's the busy time for many RV and state parks.
