If the water source is new to you I'd have it tested even before bathing in it. If storing any well water I'd chlorinate it. For drinking water the Berkey systems work great and the filters last a long time.
You can't hardly find a more expensive way to get 120 volts than a portable generator but what can you do. It works for a couple days here and there but would very pricey to run it every day.
I run a Honda 3000 for my RV ac 13,500 btu. It works good but sometimes the comoressor hits hard when running on Eco mode in high temps. I might consider a champion and people also mention the Predator series from harbor fright.
You can find several posts on here where people are running on 2000 watt inverter/generators after installing a device in the ac called Microaire.
As far as the black waste I use two 15 gallon blue totes but they are sort of heavy to get into my truck. I have a macerator but would want about a 50 gallon tank up in the truck if using it because of having to run gray and fresh through it to flush everything.
The macerator is out of the question for me when boondocking because of having to haul fresh water but if you have some water from the windmill it wouldn't be as bad. I was hauling the two 15 gallon totes every two weeks. If I knew that I was going to be parked and to do it all the time I'd come with a bigger truck tank and pump into it. I'd also consider a utility trailer with maybe a 100 gallon tank so it stood on it's own instead of having it in and out of the truck. What general area of Texas? There are a lot of inexpensive out of the way places in west Texas but it's difficult to drive 80 miles to the grocery store or 140 to a Walmart. :) I like Terlingua.
Outside Ozona. Thanks for the info. For the well water I’d treat anything we pulled out of it. I still wouldn’t drink it. Historically we don’t fill our black tank but once maybe twice in the fall season so I’m not anticipating it being a big issue. Good info on the AC pump. For the generator power I really don’t anticipate using it 24/7 except when it is really hot and I think those trips will be more infrequent. My buddy has a predator and likes it. I like the warranty on he champion though. 3 months vs 3 years. During the winter I’d expect to use generator power maybe 3-5 hours a day if we really want to watch football :).
You do realize that the water you are drinking in your town is probably well water. I don't know the ground water situation in your area but, if you have it tested it might be fine. Then you wouldn't have to bring water out from town. There are even Home Water Test Kits that you can get on Amazon.
