- Looked at the manual. Yes, it is full pilot light system with 120 volt element as a manual setting.

My "new" (2004) fridge stays lit all the time - that's the small fridge in our B.

For your fridge...
You should hear the "snick-snick-snick-snick whoosh" when the pilot lights and the fridge starts. It will turn off on its own when it hits the configured temp, and then snick-snick-snick-snick whoosh when it cycles back on again.
(...unless I'm wrong)
No pilot...flame IS the main flame on fridge

In lieu of 'wrong' I prefer 'apparently I was given incorrect information' - ScottGNomadOld fridges, the flame got bigger and smaller.
Modern DSI fridge, the flame comes and goes.
