If the OP would like the vinyl interlocking planks, Allure Ultra is the product to use. It has a mechanical interlocking edge system. The Allure plank has a self adhesive edge and there have been problems with that in RV's.
FWIW, I installed an interlocking composite wood and vinyl plank in my trailer. I made sure it had a good underlayment material under it, even with an attached rubber back. It has been installed through three MN Winters and is still looking nice. Folks that spill a lot of water on these planks or can't take a shower without a puddle on the floor should avoid them as they are not sealed on the edges and warping may occur.
I used a plank laminate (Armstrong) in my motor home. As you say water can be an issue, so per their instructions, in areas that are subject to water and liquid spills (front of sink, refrigerator and step well) I used a waterproof glue on the seams and silicone caulk in the 1/4 inch required gap next to walls. Worked very well for the 7 years or so I had the motor home after that.
