We did this earlier this year. It was actually very simple. It took most of a day to pull the old carpet, the small section of vinyl in the kitchen area and pull the staples. We then used the shop vacuum to clean up. The next day I laid the flooring in a half day with my BIL helping. That afternoon I put down some very small cove molding to give the edges a finished look.
The tools I used were a sharp razor knife, a straight edge for the flooring. And a manual miter saw, a hammer and nail set, and the razor knife for the molding.
For the flooring, we used the Allure vinyl plank from Home Depot. We chose this after visiting flooring stores, one of which recommended the Allure over their own product. It locks together similar to laminate but cuts much easier.
To cut it, score with the razor knife along a straight edge, then snap along score line. Any trimming can then be easily done, if needed using the knife.
The molding is cut using a manual miter saw and the cuts can be cleaned up, if needed, using the razor knife with a new blade for a perfect fit.
