I think your set up looks pretty good. Maybe a touch nose high but i don't think it's drastic enough to cause the issues you describe.
How long is your rig? Seems like a long trailer to me and although seemingly light by weight it's still going to act like a huge sail in the wind.
If this was your first interstate run i think what you felt was pretty normal. Big rigs are going to push you around even with the best set up when your pulling a trailer that long with a half ton truck.
Just my opinion. My 15 silverado has the stock p rated goodyears on it. Max psi is 51.
Before going on my recent trip i aired all of them to 50 cold. Truck pulled my similar weight Layton excellent. No issues at all. But i kept my speed to 60mph and just took my time. I aired the tt tires to 65psi, the max cold sidewall pressure.
During the trip my rear ties heated up to 54psi and the front to 53 psi.
The one earlier poster said it best. Pulling a large tt safely takes a lot of concentration. I am always alert and don't relax till I'm set up on site.
To each their own though. This is just what i do. I've been pulling trailers for over 20 yrs now and I'm still as on guard and cautious as i was the first time i went down the road with a trailer
