Same here. As we were about to leave Florida (in Jan.) for the single-digit temps in Indiana/Michigan, I did a little research and discovered that urine can freeze at around 28 degrees. We opted to not use the toilet AT ALL - but normally, with temps just below freezing, we simply "flush" with a pint or so of antifreeze. Been doing this for over a decade with our Class C, whose plumbing lines/tanks are completely exposed, and have never had any problems with stuff freezing.
De-winterizing is easy, assuming there's just antifreeze in the plumbing lines. Probably doesn't use any more water from the campground than a shower? Go for it!
