I don't grease the stinger, never have, never will. As mentioned above you need to make sure there is no tension between the hitch and stinger for it to come out easily. I loosen the jacks until they become slack and that's it. Any more than that it will put pressure on the stinger again. That's the beauty of the jacks, you can use them to angle the hitch up, down and side to side to match the angle of the stinger.
You're problem may be with having the chains completely undone. The weight and angle of the hitch head hanging on the stinger may be enough to bind it up.
