3000lb trailer with all that stuff to hook up? Personally I’d try to return all that stuff and get some bags or helpers if you need to take out a little sag.
Regarding your hitch shank. If it’s at the right height now (it looks good from the pic but can’t really tell), flipping the shank over will raise the hitch head a lot and it will be too high.
If you’re keeping that hitch setup and vehicle, just cut the bottom off of the drop portion Not many other options unless you can get an even shorter drop hitch shank.
