I think that's it. We bring clothes and food the day of. Turn the fridge on and roll out. I will say, I've only had my camper a month so I've only used it in June and July so far.
Well you are off to a good start, time to add clothes, camping clothes basically personal hand me downs.

food basics in there all summer, nothing in the winter

We do this all the time especially when we come home but leave the rv down south for a couple months. The only thing we have ever removed was perishable food. Everything else stays including cereal, soups and whatever products with shelf lives beyond our return. Last winter, we had a bad ice storm and sure enough, the power went out all over the area due to ice covered tree limbs taking out power lines. It was so cold and all we had to do was walk out to the camper, fire up the generator, turn on the heat and pop in a DVD. :)
We also leave food in fridge. Mostly condiments and things like salt, pepper, and sugar we put in the fridge just to keep the ants off. - tinner12002ExplorerEverything left in but all food is taken out.
- SCVJeffExplorerWhen we come back from camping, the tanks are dumped, including remaining fresh which is refilled. Clothes are restocked along with anything else needed. On the way to storage, Diesel and LP (if needed) are topped off. When stored it is 100% ready to go sans cold food.

- jplante4Explorer IILeaving paper products (TP, PT, etc) can be a problem if you get critters inside the rig. They will use the paper to make nests and the associated mess. Over the winter, I remove all organics.
- CavemanCharlieExplorer IIII store my TT in a shed on my farmsite. I leave everything in there except in the winter. Then I remove the canned food
