I've been guilty on many occasions of hurrying to get to my favorite restaurant before they closed, especially after a night of partying (when I was much younger). It wasn't uncommon for them to still have several customers finishing up nearly an hour after closing, and that included me and my date. I think people assume that last minute drop ins are built into the closing time. I don't think anyone intentionally makes life difficult for others.
I do things much differently now though. If I ask a place to wait an extra 15 minutes, I WILL be there in 15 or less and will thank them profusely. If I am a last minute customer, I will hurry and be ready to leave at closing time.
Again, I don't think people intentionally set out to do this stuff. They simply don't give proper thought to the fact that their worlds often intersect and affect the worlds of other people.
