Or... look into inflatable or frame kayaks? I carried a nice Sea Eagle Fastrak 385 in our 5th wheel - it only took about 5 minutes to inflate; and the paddling performance was pretty darn good. Was rated for up to Class III whitewater; also made a nice dive and fishing platform.
