A test for whether you need to replace the AAV, if you run the sink traps full of water and the smell goes away, the AAV needs to be replaced.
I don't believe your last sentence is correct. It would be possible to have full traps and no smell, even without an AAV present. Actually, a functioning air admittance valve may allow the trap water to be drawn out quicker when dumping as it allows for the displacement of the trap water.
