Why can't I get what I want with manual transmission

I have tried to price out several manual transmission vehicles on Edmunds.com. It seems that when you opt for a manual transmission, you cannot add any options. Why? I want al the bells and whist...

And some manuals that state in the owner's manual can't be towed can actually be towed. Mazda Miata is a prime example.
