Why can't I get what I want with manual transmission

I have tried to price out several manual transmission vehicles on Edmunds.com. It seems that when you opt for a manual transmission, you cannot add any options.

Why? I want al the bells and whistles, I just want it to have a manual transmission. Is there any vehicle that will let me order a manual transmission and get some options?
