Hub temps will give you an indication of bearing and lube condition, more so when one is different than the others.
Brake drum/rotor temps right after hard use will tell you how balanced your set up is and how hard the trailer brakes are (or are not!) working. Not to mention, as noted, potential brake failures like a sticking caliper or dragging pads/shoes.
All temps are to be taken immediately after stopping...no delay.
The IR/Laser temp guns are not toys unless you want it to be.
